I lucked out in that my MIL gave me a several pork chops she bought from Hy-Vee (apparently Kansas City had a huge sale that my area did not).  So I thought Schnitzel would be a great use of them since they were the smaller, breakfast type of chop.

Have you ever had Schnitzel?  It might be my absolute favorite way of eating a pork chop (paired with Spätzle and gravy it is divine!)

 

Ingredients:

4 Thin Porkchops                                            $9.99 for 9 = $4.44

1 Large Egg                                                      $.99 a dozen = $.08

½ Cup Flour                                                     $1.46 a bag = $.09

1 cup Breadcrumbs (not Panko!)               $1.91 for a one time use box *sale*

 

Total      $14.35 if you need to buy everything new =  $1.49 a serving

 

Instructions:

  1. Set a medium saucepan on the stove over medium heat. Add some oil or spray to the bottom.
  2. Pound the pork chop as thin as possible. I usually fold it into saran wrap and pound it with the smooth side of my mallet, until about ¼ inch
  3. Coat in flour
  4. Dip into the egg
  5. Coat in the breadcrumbs, shake off the excess so it is nice and crispy!
  6. Set in pan for about 6 minutes on each side.
  7. YUM!

Pair with potatoes, pasta, veggies.  Anything!  Fast, easy, delicious.

Quick Chicken Fajitas

Chicken is on sale at Hy-Vee the last few days, ($3.99 for 2.5 lbs of Buckley’s Frozen chicken) so I’ve been coming up with easy, quick, cheap meals to make my pounds and pounds of chicken in my freezer.  MY favorite type of food is Mexican food so, of course, I’ve got to have fajitas in the mix!

This meal takes 5-10 minutes to prepare and 20 minutes to cook. It is a one pot meal so not a lot to clean up. And it makes around 6 (7 or 8 if you are frugal with your chicken, but I like mine PACKED) servings.

2-3 Tbsp oil of any sort

1 pound of chicken breast, cut into strips (the bags are 2.5 lbs so about half) $2.00

1 Vidalia onion (Aldi sells bags of onions for $0.99) $0.25

1 red bell pepper, cut in strips

1 yellow bell pepper, cut in strips (Aldi sells a package of 3 red, yellow, green for $1.99) $1.99

1 green bell pepper, cut into strips

1/4 cup water

1-ounce package of fajita seasoning (Aldi has kits but Hy-Vee brand makes a seasoning that I really love!) $0.69

1 package of tortillas (at least 8 count) (Aldi sells Casa Mamita Flour Tortillas – 8 count) $0.69

any toppings you desire, guacamole, cheese, sour cream

I’m pretty bland and, while I might add cheese, I don’t usually add extras.

Technically, it’s $0.70 a serving on these!  Of course, adding guac and cheese would jump the price but unless you are adding A LOT of extras, the price per serving will stay under $2.00

Instructions

  1. Heat up the oil then add chicken over medium heat for about 3-4 minutes until browned. Remove chicken but keep the oil and juices.
  2. Add onions and saute until soft and caramelized; about 6 minutes
  3. Add peppers to the pan with the onions and saute for 5 more minutes.
  4. Add the chicken back into the pan.
  5. Add water and seasonings and cook for about 3 minutes. Place mixture in tortillas and serve. Top with extras.

Hy-Vee Deals for 3/29-4/04

So I had a few people ask me if I could show what I do to find deals in my area.  I live in the Midwest currently and shop at Hy-Vee as much as possible (it’s literally across the street from my house)

First, of course, get a loyalty/rewards card. I also have an application on my phone called Ibotta (use my referral code and get $10 just for signing up! “Dsxmbbo”) that gives me rebates by taking photos of my receipts. (This is SO helpful!) And I always get the Sunday coupons. My printer is broken so I currently do not print of coupons form online, however, I will include them for those who do.

Next, I sit down with the ads for the week and start checking off what is on sale and what has rebates. I’ve shopped at Hy-Vee for so long that I pretty much know what the prices are and whether or not it is a good deal. For those who don’t, you can find the prices online usually on the website of the grocery store.

So, for now, Let’s look at the ad for this week 03/29/17 – 04/04/17

I know it is already the 3rd so I don’t plan to go too in depth with this but I hope to make something like a database of the great deals each week.

I find that it is easier for me to go through the Ibotta application and write down the rebates on it first. I love Ibotta and usually manage to get around $50 a month back using it so I always want to find the best deals using it first.

Sargento String Cheese – Ibotta $.50/1 – SS 01/15/17 $.75/1  – Normally $5.19 so using coupons the price ends up being $3.94  –  This is a great price for the Sargento Cheese! However, if you are looking for the cheapest, Hy-Vee brand String Cheese is still less at $3.48

The main thing is not to use coupons just to use the coupons. For my family, there are a few items we have to have Name Brand (like Heinz Ketchup!) but when it comes to cheese, we will always go with the cheapest one.

InnovAsian Cuisine® entrée – Ibotta $1.00/1 – Hy-Vee Digital coupon $1.00/1 – the ad price is $4.99 so the total price ends up being $2.99 after the Ibotta rebate. If you are looking for an easy meal for 2, this would be a good buy

Van’s Simply Delicious Products – Ibotta $.75/1 – Van’s Printable Coupon $1.25/1 – This is for any of the Gluten Free products so I can’t show you are precise price but if you are interested in Gluten Free, then this could be a good deal.

Lindsay Recloseables California Ripe Olives – Ibotta $1.00/1 – Lindsay Olives Printable Coupon $1.00/1 – Not on sale but they are usually $2.29 so this makes them a cheap and easy $0.29!

Sheila G’s Brownie Brittle Organic – Ibotta $1.00/1 – SS 03/05 $1.00/1 – Honestly, I have an addiction to these and would buy them with just one deal/coupon. Normally $3.99, this makes these half the price. The best part is, Ibotta has a separate deal for each flavor so you can get several dollars back on them! And if you happen to have extra Smart Source coupons, they will stack since each item is different.

Sargento Chef Blends – Ibotta $1.00/2 – Hy-Vee Sale 2 for $5.00 – Making them $2.00 ea.  Again, if you are a Sargento fan then this is a good deal, however, Hy-Vee brand shredded cheese is 3 for $5.00 so that makes it $1.66 ea.

Ruffle Potato Chips – Ibotta $.50/1 – Hy-Vee Sale 2 for $6.00 – This makes them $2.75 ea – If you love Ruffles, this is a pretty good deal. I however, chose Hy-Vee brand Wavy Potato Chips for $1.98,

Nestle Nesquick Powder – Ibotta $1.00/1 – No other coupons, but this Ibotta rebate says Strawberry or Chocolate with ANY size. Hy-Vee has them regularly at $2.98 so this makes a 9.3 oz canister only $1.98.

Trident Gum – Ibotta $1.50/3 – there’s a printable coupon for $1.59/3 here – These are regularly $1.18 ea so with both the rebate and the coupon, the total ends up being $0.45 for all 3!  This is a pretty great deal but you want to be super sure that the packages you pick up are the ones that are eligible. This is pretty easy as Ibotta lets you scan the item in the app before purchase to ensure it is the correct one.

Smartmade by Smartones – Ibotta $0.75/1 – Hy-Vee Ad 2 for $6.00 – This makes them $2.60 ea. For some, that is a great deal! We however, have found that they just are not good. There is very very little actual food in them. I marked a note to myself to show you how to make these freezer meals for way cheaper!

Daiya Dairy-Free Cheeze Lover’s Gluten-Free Pizza – Ibotta $1.00/1 any size any variety – there are no other coupons but there is a 10 cent fuel saver on these! It is not a lot but this one is for the select few like me who need the gluten free items. The total ends up being $6.99 which really isn’t any different than other frozen pizzas.

Quorn Meatless and Soy-Free Products – Ibotta $1.25/1 – (also $1.25/1 on Checkout 51. I haven’t used that app yet though) – No other coupons, however the Meatballs are on sale for $3.98 making the total $2.75 (or $3.75 if it is another item). Again, this is not a super amazing deal, however, those who can’t have soy or meat will love the deal (it’s also cheaper than other meatless items!). There is also a 7 cent fuel saver on the regular priced “meats.”

Deep River Snacks Kettle Cooked Potato Chips or Honchos Organic Tortilla Chips – Ibotta $0.50/1 – printable coupon at Common Kindness $1/2 – Ibotta has 2 separate rebates, one for each flavor so you can buy one of each flavor and use the coupon to turn the original price of $2.49 ea down to $1.49 ea.

Hillshire Snacking Rustic Harvest Small Plates – Ibotta $0.50/1 – Printable coupon from Coupons.com for $0.75/1 here – ends up at $1.84  – These are lke a much tastier grown up version of lunchables. Normally, $3.09 the new total of $1.84 is a good deal if you like meats and cheese with little cracker.

Clif bars MOJO – Ibotta $0.50 – Hy-Vee ad for $1.18 –  total of $0.68

Wholesome! Organic Cane Sugar – Ibotta $1.00/1 – No other coupons but this is a pretty good deal for those who use the organic cane sugar. It’s cheaper with the Ibotta rebate than the other brands – Tatal ends up being $3.39

And that’s about it!  I usually go through the Ad again and check and see if I can find coupons for anything that I really want but I wanted to show how to use the Ibotta App first. I plan to put out a deal page on Wednesdays or Thursdays with all the deal information along with where to find a coupon Database so you can do it yourself!

Super Easy King Cake

King Cake

INGREDIENTS 8 Servings

Total = $11.93 Servings = $1.49

Directions

  1. Preheat oven to 350 degrees F (175 degrees C). Grease a baking sheet.
  2. Open the cans of sweet roll dough and unroll the dough from each can into 3 strands. Working on a clean surface, place 3 dough strands side by side and gather them together to make one large strand. Fold this in half, and roll slightly to make a fat log. Repeat steps with the remaining dough. Place each log on the prepared baking sheet and shape to make a ring, overlapping the ends and pinching them together to make a complete circle. Pat the dough into shape as necessary to make the ring even in size all the way around. Cover loosely with foil.
  3. Bake in preheated oven until firm to the touch and golden brown, 50 to 60 minutes. Check often for doneness so the ring doesn’t overbake. Place on a wire rack and cool completely.
  4. Place the cake ring on a serving plate. Cut a slit along the inside of the ring and insert a small plastic baby, pushing it far enough into the cake to be hidden from view.
  5. Divide the frosting evenly between 4 bowls. Stir 1 tablespoon of milk into each bowl to thin the frosting. Use the frosting in one bowl to drizzle over the cooled cake. To the remaining three bowls of frosting, stir yellow food coloring into one and green into another. Stir the red and blue food colorings together with the frosting in a third bowl to make the purple frosting. Drizzle the cake with yellow, green, and purple frostings in any desired pattern. Dust the cake with multi-colored sprinkles and decorate with beads, additional plastic babies, curly ribbon, and other festive trinkets.

As most of us know, tomorrow is Fat Tuesday and for those in the south, that means yummy Cajun food! I like to celebrate Mardi Gras with a Crawfish bake!

If you don’t have the time or money to indulge in a giant feast with friends and dirty rice and king’s cake then here is a fun, yummy, easy to make Louisiana specialty that can make you feel like you are in the South for the festivities.

Chicken and Andouille Hash

servings: 4

INGREDIENTS

  • 1 medium sweet onion                                                            $0.99/bag
  • 1/2 medium green or red bell pepper                                  $0.99 for 3
  • 1/2 teaspoon kosher salt, or more to taste                        $1.99
  • 1/2 teaspoon ground cayenne pepper                                 $1.49
  • 2 tablespoons vegetable oil                                                    $1.59
  • 1 pound Chicken (preferably Dark meat, skinless)         $1.49/lb
  • 4 ounces smoked (cooked) Andouille sausage                 $2.98
  • 2 tablespoons Creole (or whole-grain mustard)              $1.99
  • 2 cups shredded potatoes                                                        $1.98
  • 4 large eggs                                                                                  $0.79
  • Louisiana hot sauce (optional)                                              $1.66

Total = $17.94 Amount per serving = $4.49 or 12 servings at $1.50 each

As always, some of these items will already be in your pantry so it should not cost as much as it shows. And if you wanted to make as much as possible with this recipe you would be able to make 12 servings at $1.50 a serving!

INSTRUCTIONS

  1. Dice onion and bell pepper in a medium bowl. Season them with half of the salt and half of the cayenne, stirring to coat evenly.
  2. Preheat the oven to 475 degrees.
  3. Heat the oil in a cast-iron skillet over medium-high heat.
  4. Trim the chicken, then cut into 1/2-inch pieces and place it in a bowl. Season evenly with the remaining salt and cayenne pepper. Chop the Andouille (keeping it separate from the chicken).
  5. Add the chicken to the skillet. Cook for 3 or 4 minutes, stirring until it loses its raw look. Add the Andouille and cook for 3 minutes, stirring constantly, then add the onion-pepper mixture and cook for about 6 minutes, until the onions are softened and lightly golden.
  6. Stir in the mustard, and then stir in the potatoes until well incorporated. Use the back of a spoon or a spatula to press down the hash mixture. Cook for 1 minute, then scoop and fold the mixture and press down again. Cook for about 6 minutes, stirring and pressing down with a spatula to maintain an even surface.
  7. Crack the eggs one at a time, letting them fall on top of the hash with a little space between them and making sure the yolks remain intact. Immediately transfer the skillet to the oven and cook for 3 or 4 minutes.
  8. Top with a dash of hot sauce.

Honey Garlic Chicken Drumsticks

This recipe does not have a make ahead option; however, it only takes 45 minutes from start to table.

You can also use a slow cooker for this recipe! Just place all the chicken drumsticks in the bottom of a slow cooker, season them with salt and pepper, and pour the sauce over the chicken legs. Be sure to mix the sauce beforehand. Cook on low for 6 hours or high for 4. Just remember, the skin does not crisp so you may want to finish it up in the oven for about 15 minutes on 425.

Serves – 6 to 8

Ingredients

  • 5 lbs chicken drumsticks
  • Salt and pepper
  • 1/4 tsp. crushed red pepper flakes
  • Sauce:
  • 1 tsp. olive oil
  • 1/2 cup honey
  • 2 tbsp. soy sauce
  • 1/4 cup chicken broth
  • 1 small onion, diced
  • 5 garlic cloves, minced
  • 1 tsp. cornstarch

Instructions

  1. Preheat oven to 425F. Line a baking sheet with aluminum foil for easy clean up. Add a wire rack on top if possible.
  2. In a small saucepan over medium heat, add oil. When hot, stir in garlic and onions: cook for a few minutes, stirring constantly.
  3. Add honey and soy sauce. Stir together the broth and cornstarch. Pour into pan and bring to a boil. Cook until the sauce has thickened, about 5 minutes. Remove from heat.
  4. Pat chicken so it is dry. Place onto rack and season with salt, pepper, and crushed red pepper flakes.
  5. Place into oven and cook for 10 minutes. Flip chicken and cook for another 10 minutes. Coat chicken with some sauce and cook for another 5 minutes. Flip one more time and coat the other side of the chicken. Cook for 5-10 minutes, or until chicken reaches 160F and juices run clean.
  6. Serve chicken with rice and steamed veggies if desired (and do not forget to pour on any extra sauce that is remaining!)

The Best Baked Chicken Legs

  • 2½ pounds chicken legs
  • ¾ cup honey
  • ½ cup soy sauce
  • ¼ cup ketchup
  • 2-3 cloves garlic, minced
  • salt and pepper

Instructions

  1. Preheat the oven to 350 degrees. Lay the chicken legs out and give them a good sprinkling of salt and pepper on both sides. Put them in a foil-lined baking dish with high sides (the foil is to make clean up easier and is not essential). A high sided sheet pan is the best option because the sides keep everything in but it is big enough that the chicken isn’t drowning in the sauce. It will caramelize best if half of the chicken is poking out of the sauce while cooking.
  2. In a glass measuring cup measure out the honey, soy sauce, and ketchup. Add the minced garlic and stir. If the mixture doesn’t combine well microwave it on high for thirty seconds and stir again. Pour the honey mixture over the chicken legs.
  3. Put the chicken legs in the oven and bake for 45 minutes. Take the chicken out of the oven and rotate it so that the bottom that was in the sauce is now on the top out of the sauce. Put the legs back in the oven. Raise the heat to 425 degrees and bake until the sauce is bubbly and starts to caramelize on the chicken legs. This should take about 15 minutes. Remove the chicken from the oven and allow to rest for 5 minutes before serving.

SLOW COOKER PORK ROAST

Ingredients

  • 1 3-4 lb pork roast (mine was bone-in pork shoulder)
  • 1 cup broth
  • ¼ cup balsamic vinegar
  • ¼ cup soy sauce
  • 2 TBSP honey
  • 2 tsp minced garlic

Instructions

  1. Place roast in slow cooker. Combine remaining ingredients in a 2-cup measuring cup. Whisk together and pour over roast. Cook on low 10-12 hours for that fall-apart, insanely tender type of meat. (Or on high 6-8 hours.)
  2. Prior to serving, ladle out about ¼ cup of the juice in the crock pot and strain into a measuring cup. Whisk in 2 tsp cornstarch. Add in enough juice to make 1 cup. Microwave on high for 30 seconds and whisk again. Drizzle sauce over meat prior to serving.

Garlic Chicken

Serves 4

  • 1 pound boneless skinless chicken breasts
  • 4 garlic cloves, minced
  • 3 tablespoons brown sugar
  • 1 tablespoon oil
  • 1 tablespoon butter

Instructions

  1. Preheat oven to 425°F Line a baking dish or cookie sheet with aluminum foil and lightly coat with cooking spray or lightly brush with oil.
  2. In small sauté pan, sauté garlic with in the oil until tender.
  3. Remove from heat and stir in brown sugar. Add additional herbs and spices as desired.
  4. Season chicken with salt and pepper. Place butter in a pan on medium heat and brown chicken. Place breasts in a prepared baking dish and cover with the garlic and brown sugar mixture.
  5. Bake uncovered for 15-30 minutes, or until juices run clear. Cooking time will depend on the size and thickness of your chicken.
  6. Broil for the last 5-10 minutes to make the skin crispy and golden.

Quick Teriyaki Chicken Rice Bowls Recipe

Servings: 6

Ingredients

  • 2 lbs boneless skinless chicken thighsor breasts or mix of both
  • 1/3 cup honey
  • 1/2 cup low-sodium soy sauce
  • 1/4 cup rice vinegar
  • 1 Tablespoon freshchopped ginger OR 2 teaspoons ground ginger
  • 2 cloves garlic minced
  • 1/2 cup sweet onion chopped
  • 1/4 teaspoon ground black pepper
  • 3 Tablespoons cornstarch + 1/4 cup cold water
  • Broccoli (optional)
  • Rice (optional)

Instructions

  1. Place chicken in slow cooker.
  2. In a mixing bowl, whisk together honey, soy sauce and vinegar. Add ginger, garlic, onion and pepper. Whisk well. Pour the mixture over chicken. Cover slow cooker. Cook on LOW for 6 hours or on HIGH for 4 hours.
  3. When done, DO NOT turn off the slow cooker. Shred chickenwith two forks.
  4. In a small measuring cup, whisk cornstarch with cold water. Add to slow cooker and stir. Let cook for 10 minutes and stir again. The mixture should thicken.
  5. Serve over rice with a side of broccoli

One-Pan Cheesy Chicken, Broccoli, and Rice

Serves: 4-6

Ingredients

  • 3 tablespoons extra virgin olive oil
  • ½ medium yellow onion, diced finely
  • 1 pound boneless skinless chicken breasts, cut into bite sized pieces
  • 2 cloves of garlic, minced
  • 1 teaspoon of kosher salt and freshly ground pepper to taste
  • 1 cup uncooked extra long grain white rice
  • 2½ cups broccoli florets, cut into bite sized pieces
  • 2½ cups of low-sodium chicken broth
  • 2 cups shredded extra sharp cheddar cheese

Instructions

  1. In a large skillet or pan, sauté onions in two tablespoons of olive oil over medium heat. Season chicken with salt and pepper.
  2. Once onions soften, increase the heat to medium high and add chicken to the pan.
  3. Brown the chicken pieces and add the garlic. Cook for about 1 more minute.
  4. Push chicken to one side of the pan and add additional tablespoon of olive oil to other side.
  5. Add the uncooked rice in the olive oil and sauté it for a couple of minutes.
  6. Add the chicken broth to the pan and bring the mixture to a boil. Lower the heat to a simmer and cover the pan with a lid.
  7. Cook chicken and rice mixture covered for about 12 minutes.
  8. Sprinkle the broccoli evenly over the chicken and rice mixture and stir to combine.
  9. Continue to cook covered another 8 minutes on low or until broccoli and rice are both tender.
  10. Remove from heat and stir in half a cup of cheese.
  11. Sprinkle remaining cheese on top and cover with a lid, letting it sit for 1-2 minutes or until cheese has melted.

Notes

You need a large skillet or pan with a higher edge for this dish to hold everything.

EASY HEALTHY BAKED LEMON CHICKEN

serves: 4

INGREDIENTS

  • 4 boneless skinless chicken breasts
  • 3 tablespoons butter
  • ⅓ cup chicken broth
  • 4 tablespoons fresh lemon juice
  • 1 tablespoon honey
  • 2 teaspoons minced garlic
  • 1 teaspoon Italian seasoning
  • salt and pepper to taste (I used 1 teaspoon salt and ¼ teaspoon pepper)

Intructions

  1. Preheat oven to 400 degrees and grease a baking sheet or large casserole dish.
  2. Melt butter in a large skillet over medium-high heat. Add chicken and cook chicken 2-3 minutes on each side just until browned. Transfer chicken to prepared baking sheet.
  3. In a small bowl whisk together chicken broth, lemon juice, honey, garlic, Italian seasoning, and salt and pepper.
  4. Pour sauce over chicken. Bake 20-30 minutes (closer to 20 for smaller chicken breasts, closer to 30 for larger) until chicken is cooked through. Every 5-10 minutes spoon the sauce from the pan over the chicken.

 

 

Eggs, Eggs, Eggs!

Eggs are an amazing source of protein and can be made so many different ways. Along with protein, they are rich in many vitamins like A, B, and even Iron.

In honor of the sale and the 6 dozen eggs I now have in my fridge, here are some great budget friendly meals you can make with ingredients bought while picking up the eggs.

Heavenly Eggs

Delicious eggs in a rich tomato sauce served on toasted bread for breakfast or delicate angel hair pasta for a light lunch.

2 Tbsp Cooking Oil – $1.59

1 Medium Onion – 2 for $5 (ad price)

2 Cloves Garlic, minced – whole garlic $0.89, minced in a jar $1.99

2 Cups Marinara Sauce – $1.29 (ad price)

4 Large Eggs – $0.79

1 Tsp Basil -$2.19

1 Tbsp Parmesan Cheese – $2.24

1/4 Tsp Black Pepper – $1.99

4 Slices Bread (any choice), toasted (Breakfast) – Wheat Bread $1 (ad price)

A lot of these prices are for more than what is needed and some of the items are staples that will already be bought. Most blogs don’t include the pantry. This makes it seem like the meal costs less than it actually does. If buying everything mentioned here, this recipe can make 3 times the amount of eggs mentioned. Making it 6 servings for just under $20.

 

  • Heat oil in large skillet over medium heat.
  • Add onion, garlic and bacon. Cook 4 to 6 minutes.
  • Reduce heat to medium-low. Add marinara simmer.
  • Crack an egg into a small bowl, making sure not to break the yolk. Make a well in the sauce roughly large enough to hold the egg and pour it in so that the yolk and most of the white is contained. Repeat with the remaining eggs, evenly spacing them around the pan.
  • Sprinkle the sauce with basil; cover and cook 6 to 8 minutes for medium-set.
  • Remove from the heat and sprinkle with Parmesan and pepper.
  • To serve, top each slice of toasted bread with an egg and sauce. Serve immediately.
